Okara Lemon Cookies Made with Vegetable Oil

  1. Combine and sift the cake flour and the corn starch.
  2. Add the lemon juice and salt to the egg and blend with an electric mixer.
  3. When it's well mixed, add the vegetable oil little by little, blending with each addition, until it thickens.
  4. Add the powdered sugar and blend some more.
  5. Combine and fold in the well-sifted ingredients from step one and the okara.
  6. When the dough has come together, wrap and let it sit in the fridge for over 30 minutes.
  7. Preheat the oven to 170C.
  8. Roll out the dough and cut out any shapes you like.
  9. Bake at 170C for 13-15 minutes.
  10. I used this lemon juice.
  11. This is the okara powder I used.
  12. With water it expands to 4 times the amount.
