Grilled Sweet Potato Salad

  1. Heat gas grill on medium or charcoal grill until coals are ash white.
  2. Place sweet potatoes, onion and red pepper onto 12-inch length of heavy-duty aluminum foil.
  3. Dot top of vegetables with small pieces of softened butter.
  4. Top with another 12-inch length of foil.
  5. Seal edges of foil by folding over twice
  6. Place aluminum foil packet onto grill.
  7. Grill, turning once, 15-20 minutes or until potatoes are tender.
  8. Open packet carefully; spoon vegetables into serving bowl.
  9. Add all remaining ingredients; gently toss to coat.
  10. Serve warm or at room temperature.
