Christmas Eve Salad

  1. Peel oranges, section over a bowl to catch juice.
  2. Peel and slice bananas.
  3. Core and slice apple.
  4. Toss apple and banana with orange sections and orange juice.
  5. Drain fruits, arrange with pineapple chunks, sliced beets, jicama and sugar cane on large lettuce lined platter.
  6. Sprinkle with peanuts and pomegranante seeds.
  7. Thin mayonnaise or salad dressing with a little milk to make drizzling consistency.
  8. Pass with salad.
