Strawberry Puree Cheesecake
- Base
- 1 cup sweet biscuit crumbs
- 1/3 cup butter, melted
- Filling
- 1 tablespoon gelatine
- 1 cup strawberry puree
- 500g block PHILADELPHIA Cream Cheese, softened
- 1/2 cup caster sugar
- 1 tablespoon lemon juice Safeway 4 ct For $5.00 thru 02/09
- 3/4 cup cream, lightly whipped
- Topping
- peeled sliced orange Safeway 1 lb For $0.79 thru 02/09
- strawberries Safeway 1 lb For $3.99 thru 02/09
- Combine biscuit crumbs and butter, press into the base of a 22cm spring form pan; chill.
- Stir gelatine into strawberry puree, heat in saucepan or microwave (HIGH for 45 seconds) until gelatine dissolves.
- Beat Philly* until smooth, add sugar, lemon juice, gelatine mixture and cream.
- Pour into prepared crumb crust.
- Chill until firm.
- Decorate with orange slices and strawberries.
