Grilled Asparagus With Buttery Breadcrumbs

  1. Wash, dry and trim off the woody ends of the asparagus.
  2. Combine asparagus, olive oil, vinegar, lemon zest, lemon juice, mustard, 1/2 tsp salt and black pepper in a large zip-top bag.
  3. Marinate 30 minutes at room temperature, or up to overnight in the refrigerator.
  4. Heat a grill or grill pan to medium-high.
  5. Grill asparagus until nicely charred, 2-3 minutes per side.
  6. Meanwhile, melt butter in a small skillet.
  7. Add breadcrumbs and remaining 1/4 tsp salt and cook, stirring often, until dark golden brown and very fragrant.
  8. Serve asparagus with breadcrumbs on top.
