Apple Fennel Soup Recipe
- 2 c. low-sodium chicken broth
- 2 c. water
- 1/2 c. white wine
- 2 x Golden brown Delicious apples peeled, minced
- 1 c. thinly-sliced carrots
- 1 sm onion thinly sliced
- 1/2 c. minced fresh fennel
- 1 x bay leaf
- 1/4 tsp dry thyme leaves
- 6 x peppercorns Low-fat plain yogurt (optional)
- In large pot, combine all ingredients, except yogurt, and bring to boil.
- Reduce heat and simmer, covered, for 20 min.
- Strain soup, reserving liquid.
- Remove bay leaf from apple vegetable mix.
- In blender or possibly food processor, puree mix; add in reserved liquid and blend well.
- Reheat soup, if necessary, ladle into soup bowls and serve with a dollop of yogurt, if you like.
- This recipe yields 4 servings.
