Warm Potato Salad With Honey Dressing

  1. Place the potatoes in a saucepan, cover with water, season with salt and bring to a boil.
  2. Cook the potatoes until tender, around 10-15 minutes; drain.
  3. Mix the olive oil with the honey, garlic, ginger, lime zest, mustard and vinegar.
  4. Using a fork very lightly break the warm potatoes.
  5. Add the peppers and chives and mix in the honey dressing.
  6. Season with salt and freshly ground pepper.
