Balsamic Philly, Grilled Veg and Prosciutto Baguette
- 125g PHILADELPHIA Light Spreadable Cream Cheese
- 1/2 cup basil leaves, finely chopped
- 2 teaspoons white balsamic vinegar
- salt and pepper, to taste
- 2 teaspoons oil
- 2 small zucchini, sliced lengthways
- 1 large yellow capsicum, cut into wide strips
- 4 small baguettes (or 4 baguette portions), sliced 3/4 through
- 1/2 cup basil leaves, extra
- 4 thin slices prosciutto
- Combine Philly*, basil, vinegar and seasonings until smooth.
- Heat oil in a grill pan and chargrill zucchini and capsicum.
- Spread the Philly* mixture over the base of the baguettes.
- Top with basil leaves, zucchini, capsicum and prosciutto.
- Serve.
