Tomato Curried Chicken

  1. Preheat oven to 350F.
  2. Cut chicken into bite-sized pieces and coat with seasoned flour.
  3. (I season my flour with salt, pepper and garlic powder.)
  4. Brown chicken in butter until lightly golden.
  5. Using a slotted spoon, remove chicken from pan and place in a greased casserole, being careful to drain the chicken.
  6. Combine onions, garlic, curry and thyme in a bowl, then add to the pan drippings.
  7. Simmer until golden.
  8. Add tomatoes and simmer until deglazed.
  9. Pour sauce over chicken.
  10. Bake uncovered for 45 minutes or until chicken is tender.
