Tomato Curried Chicken
- 4 whole Chicken Breast, Boneless And Skinless
- Seasoned Flour, Enough To Coat Chicken
- 1/4 cups Butter
- 1/4 cups Onion, Diced
- 1 clove Garlic, Minced
- 3 teaspoons Curry Powder
- 1/2 teaspoons Thyme
- 4 cups Fresh Tomatoes, Chopped
- Preheat oven to 350F.
- Cut chicken into bite-sized pieces and coat with seasoned flour.
- (I season my flour with salt, pepper and garlic powder.)
- Brown chicken in butter until lightly golden.
- Using a slotted spoon, remove chicken from pan and place in a greased casserole, being careful to drain the chicken.
- Combine onions, garlic, curry and thyme in a bowl, then add to the pan drippings.
- Simmer until golden.
- Add tomatoes and simmer until deglazed.
- Pour sauce over chicken.
- Bake uncovered for 45 minutes or until chicken is tender.
