Zucchini w/ Peppers & Sage
- 1 large zucchini; half moons
- 1 yellow bell pepper; medium dice
- 8 leaves sage; chiffonade
- 1 onion; large dice
- 1 clove garlic; minced
- 1 salt and pepper
- 1 olive oil; as needed
- Heat oil in a large saute pan.
- Add zucchini, peppers, and onions.
- Season.
- Saute on medium-high heat until nearly tender.
- Add garlic.
- Saute on medium-low heat until garlic is fragrant.
- Add sage and toss.
- Variations; Parmesan, gruyere, heavy cream, vegetable stock, flavored olive oils or butters, horseradish, mustard, parsley, cilantro, chives, scallions, bacon, roasted bell peppers, yellow squash, shallots, tomatoes
