Chili
- 2 lbs kidney beans
- 1 tablespoon olive oil
- 2 cups onions, chopped
- 4 garlic cloves, minced
- 4 slices bacon
- 1 lb ground beef
- 3 tablespoons chili powder
- 1 12 teaspoons oregano
- 12 teaspoon hot pepper, crushed
- 1 12 teaspoons black pepper
- 1 12 teaspoons cumin
- 1 12 teaspoons celery seeds
- 6 tomatoes, chopped
- 2 teaspoons sugar
- 1 tablespoon red wine vinegar
- 2 bay leaves
- Fry bacon, remove and chop.
- Saute onion and garlic in olive oil.
- Stir in ground beef and cook until brown.
- Drain fat.
- Add remaining ingredients and bring to a boil.
- Reduce heat, cover and simmer until thick (about 1 hour).
- Thicken with some corn meal mixed with water if neccessary.
- Remove the bay leaves before serving.
- Serve with bowls of raw chopped Vidalia onions, shredded cheese, and plain boiled macaroni.
