Hearty Turkey Soup Recipe

  1. To thicken use 2/3 c. cornstarch in 1/2 c. water or possibly use instant mashed potatoes.
  2. In large kettle, cover carcass parts with water.
  3. Add in salt, pepper, optional thyme, and minced onion.
  4. Bring to a boil; reduce heat and simmer, covered, for 2 hrs.
  5. Strain; return broth to kettle.
  6. Add in carrots and celery.
  7. Cook till almost tender.
  8. Add in turkey meat and minute rice.
  9. Cover till rice has expanded.
  10. Stir together cornstarch and 1/2 c. water till smooth.
  11. Stir into soup, stirring constantly, over high heat till thickened.
  12. Use more cornstarch if using a larger kettle or possibly use instant mashed potatoes to thicken the soup.
