Christmas Cake
- 200 g glace cherries, mixed colours
- 125 g butter
- 75 g caster sugar
- 75 g brown sugar
- 2 eggs
- 2 tablespoons golden syrup
- 1 cup plain flour
- 14 cup self-rising flour
- 12 pinch salt
- 12 teaspoon mixed spice
- 14 teaspoon nutmeg
- 75 g raisins
- 125 g sultanas
- 125 g currants
- 30 g almonds, sliced
- 2 tablespoons sherry wine
- Combine fruit and nuts in a large bowl with sherry, cover and stand overnight.
- Beat butter till soft, add sugars and beat till creamy.
- Add eggs, one at a time, while still beating, then add golden syrup.
- Add sifted flours and spices alternatively with fruit mixture and then mix till combined.
- Grease and line a 20cm round tin.
- Spread mixture evenly and bake for approximately 1 hour and 50 minutes in an oven set at 150C.
