Lemon Kiss Cookies

  1. In large bowl, beat butter, sugar and lemon extract until fluffy.
  2. Add flour and almonds; beat at low speed until blended.
  3. Cover; refrigerate 1 hour.
  4. Shape tablespoonful dough around each candy kiss, covering completely.
  5. Roll in hands to form ball.
  6. Bake at 375F on ungreased cookie sheets for 8-12 minutes.
  7. Melt chocolate chips and shortening together over low heat; drizzle over cookies.
