Chuck Wagon Beef Stew
- 1 lb lean beef round steak, cubed (3/4 inch)
- 34 cup beef broth
- 1 (14 ounce) can diced tomatoes
- 1 (15 ounce) can kidney beans, rinsed and drained
- 12 cup chopped onion
- 2 small red potatoes, cubed
- 2 carrots, sliced
- 1 tablespoon cornstarch
- 2 tablespoons cold water
- 2 -3 tablespoons Worcestershire sauce
- salt and pepper
- Combine all ingredients except cornstarch, water and Worcestershire sauce, salt and pepper in slow cooker; cover and cook on low 6-8 hours.
- Turn heat to high and cook 10 minutes; stir in combined cornstarch and water, stirring 2-3 minutes.
- Season to taste with Worcestershire sauce, salt and pepper.
