Curried Chicken Breasts
- 4 each chicken breast halves, boneless, skinless
- 1/4 cup flour, all-purpose
- 3 tablespoons butter, unsalted
- 1/2 cup onions chopped
- 2 cloves garlic minced
- 1 1/2 tablespoons curry powder
- 1/2 teaspoon salt
- 1/2 teaspoon ginger ground
- 1/2 teaspoon cinnamon
- 1/4 teaspoon black pepper
- 2 1/2 tablespoons flour, all-purpose
- 1 tablespoon lime juice
- 1 can chicken broth
- Preheat oven to 350F (180C).
- Roll each breast in flour.
- Melt butter in skillet and brown chicken.
- Remove and place in baking dish.
- Add the chopped onion and garlic to butter and cook until onion is golden.
- Add curry powder, salt, ginger, cinnamon, and pepper and cook for 2 to 3 minutes, stirring constantly.
- Add flour and chicken broth, whisking until smooth.
- Pour sauce over chicken, cover with foil and bake 1 hour.
- Before serving, add lime juice.
