Chocolate Mint Snaps Recipe
- 4 (1 ounce.) sqs. chocolate, unsweetened
- 1 1/4 c. shortening
- 2 c. sugar
- 2 Large eggs
- 1/3 c. corn syrup
- 2 1/2 tbsp. water
- 2 teaspoon peppermint extract
- 1 teaspoon vanilla extract
- 4 c. all-purpose flour
- 2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 c. plus 2 tbsp. sugar
- Heat chocolate over warm water in top of double boiler.
- Remove from heat.
- Cream shortening, gradually add in 2 c. sugar, beating till light and fluffy.
- Add in melted chocolate, Large eggs, corn syrup, water and flavorings; mix well.
- Combine flour, soda, and salt; add in to creamed mix, beating just till blended.
- Shape dough into 1 inch balls and roll in remaining sugar.
- Place on ungreased cookie sheets; bake at 350 degrees for 10 min.
- Cold on cookie sheets 5 min.
- Remove to wire racks and cold completely.
- Yield: 10 1/2 dozen.
