Doris's Crockpot Lamb Stew
- 2 lbs lamb, cubed into 1-inch pieces
- 0.5 (1 1/4 ounce) package dry onion soup mix
- 1 bay leaf
- 18 teaspoon thyme
- 12 teaspoon salt
- 2 cups water
- 14 cup tapioca
- Trim fat from lamb cubes.
- Place in crock pot.
- Add remaining ingredients and mix.
- Cook on high 1 hour, then on low 8-9 hours, or keep it on high 4-5 hours.
- Serve over noodles or rice.
- You can also mix in veggies during the last few minutes of cooking.
