Eqd Creamed Spinach

  1. In a bowl, mix cream cheese, sour cream and 1oz of grated Parmesan, set aside.
  2. Over medium heat, pan fry bacon until crisp.
  3. Crumble bacon, set aside.
  4. Remove 1/2 of bacon fat from pan.
  5. Into pan with bacon fat, add onion and garlic; saute for about 1 min -until onion becomes translucent.
  6. Wash spinach in cold water; shake lightly.
  7. Do not allow to dry.
  8. Place rinsed spinach into pan and stir until wilted.
  9. Cover; cook on med-low heat for about 2 minutes.
  10. Remove lid, add cheese mixture; saute about 2 minutes.
  11. Remove from pan to serving bowl, top with crumbled bacon and remaining parmesan.
  12. Sprinkle with Nature's Season, if desired, and serve.
