Macrobiotic Simmered Sweet Onion and Sweet Potato
- 200 grams Sweet potato
- 200 grams Onion
- 200 ml Water
- 1 tbsp Beet sugar (or cane sugar)
- 1/2 tsp Salt
- 1 tbsp Soy sauce
- 1/2 tsp Kombu dashi stock granules
- 1 Canola oil
- Cut the onions and sweet potato into bite-sized pieces.
- Heat canola oil in a pan and saute the onions.
- When the onions have softened, add the sweet potato cubes.
- Add the water, soy sauce, sugar, dashi granules and salt to the pan, and simmer until the potatoes can easily be pierced with a skewer.
- Turn off the heat, and cover with a lid to let the flavors meld.
