Macrobiotic Simmered Sweet Onion and Sweet Potato

  1. Cut the onions and sweet potato into bite-sized pieces.
  2. Heat canola oil in a pan and saute the onions.
  3. When the onions have softened, add the sweet potato cubes.
  4. Add the water, soy sauce, sugar, dashi granules and salt to the pan, and simmer until the potatoes can easily be pierced with a skewer.
  5. Turn off the heat, and cover with a lid to let the flavors meld.
