Green Bean & Semi Roasted Cherry Tomato Salad

  1. Blanch beans in boiling water for 2 minutes.
  2. Remove, strain and throw in cold water to refresh (and keep that lovely green colour).
  3. Meanwhile- you have baked cherry tomatoes for 5 to 10 minutes at 180*C. Remove and refresh.
  4. Throw beans, tomatoes, onion, olive oil, lemon juice and seasoning in a bowl.
  5. Gently toss and serve.
  6. Delicious fresh, sweet salad.
  7. I love it- enjoy!
