Kiwi - Watermelon Margarita Slush
- 1 cup sugar
- 1 cup water
- 2 limes
- 4 cups watermelon, Cubed
- 2 cups tequila, Silver
- 4 ounces orange liqueur
- 4 kiwi fruits, peeled and cubed
- 1 kiwi, sliced for garnish
- 16 ounces sparkling wine
- Make Lime Infused Simple Syrup:.
- Bring 1 Cup Water to a boil and add Sugar.
- Stir until sugar dissolves and remove from heat.
- Stir in juice and zest of one lime.
- Cool in refrigerator for 2-4 hours.
- Make Watermelon Ice Cubes:.
- Place Watermelon and 1/2 cup of the Lime Infused Simple Syrup into a blender.
- Liquefy and pour into 2 ice cube trays.
- Freeze until firm -- about 4 hours.
- To make the Margarita:.
- Add the Watermelon Cubes, Kiwi Cubes, Tequila, Orange Liquer, and Juice of the second lime into a blender.
- Blend until the desired consistency.
- I actually like it to be less frozen than a typical Margarita or Daquiri.
- I also like to do this in batches as to not overload the blender.
- Serve in pretty glasses rimmed with coarse salt.
- Garnish with a splash of sparkling wine and kiwi slices.
