Easy Pumpkin Oat Muffins
- 2 18 cups instant oats
- 1 12 cups all-purpose flour
- 1 cup granulated sugar
- 2 14 teaspoons baking powder
- 1 teaspoon baking soda
- 12 teaspoon salt
- 1 teaspoon cinnamon
- 1 large egg
- 1 egg white
- 3 cups pumpkin pie filling
- 13 cup butter, melted
- cream cheese frosting
- Combine first 7 dry ingredients in large bowl and mix well.
- Beat egg, pumpkin filling, and melted butter together in small bowl until smooth.
- Add pumpkin mixture to dry ingredients.
- Stir just until moistened.
- Fill greased muffin cups almost full.
- Bake at 375F for 20-25 minutes, or until top springs back when lightly touched.
- Once cool, frost away!
