Lower Fat Beefy Cornbread (Main Dish)

  1. In a large skillet, cook beef, chili powder, and cumin until meat is brown.
  2. Drain off fat.
  3. Stir in corn and the 1/4 cup salsa.
  4. In a medium bowl, stir together flour, cornmeal, sugar, baking powder and salt.
  5. In a small bowl combine eggs, milk and oil; add to flour mix, stirring just until moistened.
  6. Add jalapeno pepper to mix, stir.
  7. Spray a 2 quart rectangular baking dish w/ nonstick coating.
  8. Spread half of cornmeal mix in dish.
  9. Spoon meat mixture over batter and sprinkle with half of cheese.
  10. Spoon remaining cornmeal mix over cheese, spread to cover the meat layer.
  11. Bake uncovered in a 375F oven for about 20 minutes, until a toothpick comes out clean.
  12. Sprinkle w/ remaining cheese.
  13. Let stand for 5 minutes Serve w/ the 1/3 cup heated salsa.
  14. If desired, garnish w/ fresh cilantro and jalapeno pepper slices.
