White Bean and Sausage Soup

  1. In a large saucepan, heat oil.
  2. Add sausage, carrots, and celery and cook over medium heat, until sausage is browned and vegetables are softened, 6 minutes.
  3. Add beans, tomatoes, wine, rosemary and 4 cups water.
  4. Bring to a boil.
  5. Reduce heat and simmer, uncovered, until soup is somewhat thickened and reduced, about 10 minutes.
  6. Season with cayenne and black pepper.
  7. Serve topped with cheese.
