Wild Rice-Chicken Supreme(Good Enough For Company, Brunch Or Dinner)
- 1 pkg. Uncle Ben's long grain and wild rice
- 1/4 c. butter or margarine
- 1/3 c. chopped onions
- 1/2 c. flour
- 1 tsp. salt
- dash of black pepper
- 1 c. half and half
- 1 c. chicken broth
- 2 c. cubed, cooked chicken
- 1/3 c. chopped pimento
- 1/3 c. parsley
- 1/4 c. chopped almonds
- Prepare rice and seasoning packets according to directions. Melt the butter in a large saucepan.
- Add onions; cook on low until tender.
- Stir in the flour, salt, pepper, half and half and chicken broth.
- Cook until thickened.
- Stir in chicken, pimentos, parsley, almonds and cooked rice.
- Place in 2-quart casserole. Bake, uncovered, at 425u0b0 for 30 minutes.
- Makes 6 to 8 servings.
