Peanut Chicken Salad
- Peanut Garlic Dressing
- 1/3 cup KRAFT* Light Smooth Peanut Spread
- 1/3 cup coconut milk
- 2 tablespoons lime juice Safeway 3 ct For $1.00 thru 02/09
- 1 teaspoon fish sauce
- 2 red chillies, de-seeded and finely chopped
- 3 cloves garlic, finely chopped
- 1/2 teaspoon lime rind Safeway 3 ct For $1.00 thru 02/09
- Salad
- 2 skinless chicken fillets Whole Foods 1 lb For $3.99 thru 02/09
- 1/2 iceberg lettuce, sliced
- 100g sugar snap peas, blanched
- 1 bunch asparagus, trimmed and blanched
- 3/4 cup bean sprouts
- Combine the peanut garlic dressing ingredients until smooth.
- Cook chicken over medium heat in a frypan until cooked through.
- Rest and then slice thinly.
- Combine with lettuce, sugar-snap peas, asparagus and bean sprouts.
- Serve.
