Pull Pork Sandwich.
- 1 1/2 kg Leg of pork
- 4 Tomatoes sliced
- 1 Tomato, diced
- 1 Onion, chopped
- 2 tsp Bovril
- 150 ml Milk
- 150 grams Butter
- 8 Panini rolls cut open and buttered
- 250 grams Cheddar cheese grated
- 150 grams Feta cheese cubed
- 6 tsp Robertsons BBQ spice
- 2 tsp Ground black pepper
- 3 tsp Salt
- 2 tsp Paprika
- 4 tsp Brown onion soup powder mix
- 2 tsp Robertsons spice for mince
- Preheat oven to 150C
- Mix together salt, pepper, paprika, BBQ spice
- Rub 50g butter all over the pork followed by the spices you mixed together
- Put in roasting dish with lid
- Roast for 3 hours covered
- Turn oven up to 220C and roast for another hour
- Pour the meat juices into a separate bowl
- Take lid off and roast for 30 minutes
- Then rest the meat covered for 30min
- Braise the onions till light brown
- Skim the fat off the meat juices
- Place the remaining juices in a pot and bring to the boil
- Add the onions and the diced tomato then boil over medium heat for 20 minutes
- Liquidise with speed stick
- Mix together the milk with brown onion soup mix and add to gravy
- Add bovril and spice for mince, boil over medium heat stirring regularly for 15 minutes
- Add 50 grams butter and turn off heat
- Use a fork and shred pork with a pulling motion
- Mix gravy and pulled pork together
- Put sliced tomato on the rolls followed by the pork
- Mix together the cheese, melt in microwave and pour over pork
