Mache or Mesclun With Blue Cheese Dressing
- 1 ounce mache or 1 1/2 ounces mesclun
- 1 tablespoon blue cheese
- 2 tablespoons nonfat yogurt
- Freshly ground black pepper to taste
- Wash the mache or mesclun, and dry.
- Meanwhile, mash the blue cheese with the yogurt to make a smooth dressing.
- Mix greens with dressing, and season with pepper.
