Barley Bean Soup Recipe
- 1 c. Great Northern dry beans
- 2 quarts. water
- 1/2 c. barley
- 1 onion, sliced thin
- 2 carrots, scraped & sliced
- 2 stalks celery, sliced
- 1 turnip, peeled & cut into chunks
- 2 cloves garlic, chopped
- 1 sprig fresh dill weed
- 1 sprig fresh parsley
- 1 teaspoon dry basil
- 1/2 teaspoon pepper
- Boil water, covering beans and soak 1 hour.
- Pour off water and add in 2 qts fresh water.
- Add in remaining ingredients.
- Cover and cook over low heat for 3 hrs or possibly till beans are tender.
- Stir occasionally.
- Makes 10 servings.
