Apple-Cinnamon Breakfast Cookies

  1. Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper or a silicone baking mat.
  2. Grate the apple, and squeeze out the excess liquid.
  3. (This is a great snack for the kids; they love the fresh apple juice!)
  4. Mix the grated apple with the applesauce, coconut oil and maple syrup in a large bowl.
  5. Stir together the flour, oats, cinnamon, baking powder, nutmeg and salt in a medium bowl.
  6. Mix the dry ingredients into the wet ingredients until just combined.
  7. Scoop the batter onto the prepared baking sheet using a 1/4-cup measuring cup.
  8. Leave 2 inches between each cookie.
  9. Bake until lightly golden, 10 to 13 minutes.
