Panforte

  1. Preheat the oven to 350F (180C).
  2. Butter an 8in (20cm) springform pan.
  3. Line the bottom and sides of the pan with parchment paper.
  4. Place a round of rice paper in the bottom of the pan.
  5. Stir the almonds, hazelnuts, candied peel, figs, rice flour, lemon zest, cinnamon, nutmeg, cloves, and allspice together in a bowl.
  6. Stir the sugar, honey, and butter in a small saucepan over low heat until melted.
  7. Pour into the nut mixture and stir well.
  8. Spoon into the pan, and with moistened hands, press until smooth and even.
  9. Bake for 30 minutes, until set.
  10. Transfer to a wire rack and let cool completely in the pan.
  11. Remove the sides of the pan and invert onto the rack.
  12. Peel off the parchment but leave the rice paper in place.
  13. Turn right side up.
  14. Sift confectioners sugar over the panforte.
  15. Slice into thin wedges and serve.
