Casbah Couscous Pudding
- 4 egg yolks
- 2 tsp. vanilla extract
- 3 tbsp. sugar
- honey
- 1 orange rind, grated
- 1/2 tsp. salt
- 1 qt. milk
- 1/3 cup couscous
- Cinnamon, for garnish
- Combine egg yolks, vanilla, sugar, orange rind and salt in a small bowl.
- In a medium saucepan combine milk and couscous and heat just to boiling.
- Remove from burner.
- Add egg mixture and return to burner.
- Heat to a boil while stirring until thick and creamy.
- Let stand 5 minutes.
- Pour into dessert bowls.
- Sprinkle with cinnamon and cool.
