Casbah Couscous Pudding

  1. Combine egg yolks, vanilla, sugar, orange rind and salt in a small bowl.
  2. In a medium saucepan combine milk and couscous and heat just to boiling.
  3. Remove from burner.
  4. Add egg mixture and return to burner.
  5. Heat to a boil while stirring until thick and creamy.
  6. Let stand 5 minutes.
  7. Pour into dessert bowls.
  8. Sprinkle with cinnamon and cool.
