Rice And Tinned Sardines

  1. Heat the olive oil with the oil from the tin of sardines in a pan over a medium heat.
  2. Add in the onion and fry for about 2-3 minutes until the onion has softened.
  3. Add in the rice, stirring well so it doesn't stick to the pan.
  4. Cook the rice for about 5-7 minutes, stirring all the time.
  5. Reduce heat if rice starts to stick.
  6. Add in the water, then add water bit by bit until rice is cooked.
  7. About 10 minutes.
  8. Add the oyster sauce, fish sauce, soy sauce, and salts and stir well.
  9. Cook for a further 5-7 minutes.
  10. In the meantime remove sardines from tin and roughly cut them into smaller pieces.
  11. Check seasoning, I added a bit more oyster and fish sauce to suit my preference.
  12. Add the sardines, cook for about a minute and half.
  13. Gently stir.
  14. Remove from heat and serve.
