Asian Black Bean Asparagus Salad Recipe

  3. Stir red onion, cilantro, vinegar, soy sauce, warm oil, and sesame oil into beans.

  7. Trim dry, tough ends from asparagus stalks.
  8. Slice asparagus on the diagonal.
  9. Blanch in boiling water for 3 min.
  10. Remove from water, drain, and toss with marinated beans.

  12. To serve, place each lettuce leaf on a chilled salad plate.
  13. Divide salad proportionately among lettuce leaves.
