Loaded Potato Cheesecake #5FIX

  1. In a large skillet over medium heat cook bacon until crispy.
  2. Remove bacon from pan and chop into small pieces.
  3. Grease the sides and bottom of 8 inch springform pan with bacon grease.
  4. In a large bowl, mix potatoes and cream cheese.
  5. Add egg and continue to beat until light and fluffy.
  6. (About 1 minute) Add cheese and pour mixture into prepared pan.
  7. Bake at 350 degrees for 40 minutes or until middle of cake is set.
  8. (Center will puff up).
  9. Remove from the oven and top with remaining cheese.
  10. Cool slightly before removing from the pan.
