Grilled Salmon with Warm Tomato Salsa
- 6 skinless salmon fillets (4 oz. each) Walmart Supercenter 1 lb For $5.00 thru 02/14
- 1 cup halved cherry tomatoes
- 1/4 cup slivered red onions
- 1/4 cup balsamic vinegar
- 2 Tbsp. olive oil
- 1 pkg. (4 oz.) ATHENOS Traditional Crumbled Feta Cheese
- Heat grill to medium heat.
- Grill fish 5 min.
- on each side or until fish flakes easily with fork.
- Meanwhile, cook vegetables, vinegar and oil in skillet on medium-high heat 3 min., stirring occasionally.
- Add cheese; cook 2 min.
- or until heated through, stirring frequently.
- Serve fish topped with tomato mixture.
