Shrimp Sausage Chicken & Crab Gumbo

  1. in a large Dutch oven, melt 1 tablespoon of bacon fat, brown sausage.
  2. about 8 minutes, set aside
  3. and another tablespoon of baking fat to medium-high heat and brown chicken.
  4. about 8 minutes, remove, cool, refrigerate till later
  5. make roux.
  6. over medium heat whisk floors and oil in leftover bacon fat from Browning.
  7. stir constantly for 20 minutes until the color of peanut butter
  8. add celery bell peppers onion and sausage to roux.
  9. cook 10 minutes add garlic, remove from heat.
  10. stir till finish cooking/bubbling.
  11. in a separate larger pit, boil broth
  12. Add roux vegetable mixture to boiling broth.
  13. mix in seasonings and tomatoes
  14. low heat 1 hour
  15. add chicken and some gumbo file
  16. in other pan heat a tablespoon of oil over med-high heat and add okra and vinegar, cook 15 minutes
  17. stir okra in gumbo, add Worcestershire sauce
  18. add shrimp, cook 10 minutes
  19. heat crab, make rice
  20. serve and enjoy
