BBQ Skillet Chicken
- 1 Tbsp. olive oil
- 4 small boneless skinless chicken breasts (1 lb./450 g)
- 1 green pepper, cut into thin strips
- 1/2 cup chopped onions King Sooper's 1 lb For $0.99 thru 02/09
- 1 can (19 fl oz/540 mL) diced tomatoes, drained
- 1/4 cup Bull's-Eye Bold Original Barbecue Sauce
- 2 Tbsp. chopped fresh parsley
- Heat oil in large skillet on medium-high heat.
- Add chicken; cook 6 to 7 min.
- on each side or until done (165 degrees F).
- Remove from skillet; cover to keep warm.
- Add peppers and onions to skillet; cook 3 to 4 min.
- or until crisp-tender, stirring frequently.
- Stir in tomatoes and barbecue sauce.
- Return chicken to skillet; simmer 3 to 4 min.
- or until heated through.
- Serve topped with sauce and parsley.
