Quick-Toss Fruit Slaw
- 4 cups shredded cabbage, with carrot mix (pre-packaged coleslaw mix)
- 1 cup shredded red cabbage
- 2 medium organic apples, cored and coarsely chopped
- 34 cup dried fruit, mixed (cranberries, raisins, pineapple, etc)
- 14 cup chopped pecans, toasted
- 1 (6 ounce) cartonorganic low-fat vanilla yogurt
- 18 teaspoon ground nutmeg
- Toss together cabbage mixture, red cabbage, apples, dried-fruit bits, and pecans in a large mixing bowl.
- For dressing, combine yogurt and nutmeg.
- Pour dressing over apple mixture; toss to coat.
- Serve immediately or cover and chill for up to 8 hours.
