Cheesy cornbread in a cast iron pan
- 2 cup sr white cornmeal
- 1 1/2 tbsp baking powder
- 1/3 cup grated parmesan cheese
- 1/2 cup cubed colby jack cheddar cheese
- 1 tsp ground black pepper
- 1 nonstick spray as needed
- 1/3 cup olive oil, extra virgin
- 15 oz can of evaporated milk
- 1/3 cup sugar
- 2 tsp butter melted
- 1 tsp kosher salt
- 2 large eggs
- Preheat oven 450 Fahrenheit heat cast iron pan till hot spray with nonstick sprinkle ground black pepper on bottom of pan
- Mix all the rest of ingredients together but the butter, cubed cheese, and kosher salt save for later
- After mixing well pour into pan add cubed cheese on top bake in oven 20-25 minutes or till done check center with toothpicks stick in if it comes up clean then its done
- When done brush on butter on the top and sprinkle salt on top
