Sweet Onions in Parchment
- 4 lbs walla walla onions (about 6 medium)
- olive oil, for brushing
- 2 anchovies, drained and coarsely chopped
- 4 tablespoons unsalted butter, cold and cut into small pieces
- 6 tablespoons balsamic vinegar
- kosher salt
- fresh ground black pepper
- 6 pieces parchment paper, 8 in square
- 6 pieces aluminum foil, 8 in square
- Preheat oven to 350 degrees F.
- Trim the base of each onion so that it can stand upright.
- With a sharp knife remove the top of each onion, leaving the skin around the onion intact.
- Place one sheet of the parchment paper atop each aluminum sheet and brush a little grease on the parchment paper.
- Rub each onion all over and place in the center of each prepared parchment packet.
- Sprinkle each onion with anchovy bits and bits of butter, sprinkle with vinegar, season lightly with salt and pepper.
- Fold the parchment and foil up over the onion and seal tightly.
- Place the packets on a baking sheet and bake until a knife can easily be inserted into the top of the onion, 50 to 60 minutes.
- Unwrap and serve with drippings from the packet spooned over top.
