Squash Soup With Ginger and Goat Cheese
- 3 tablespoons butter
- 3 tablespoons finely sliced shallots
- 2 cups chopped acorn squash
- 1 tablespoon grated fresh ginger
- 2 12 cups vegetable broth
- salt and pepper
- 4 tablespoons goat cheese
- finely chopped fresh chives
- In pot, melt butter over medium heat.
- Saute shallots.
- Add squash, ginger and vegetable stock.
- Season with salt and pepper to taste.
- Simmer 20 min, or until squash is soft.
- In batches, puree until smooth.
- Heat until steaming.
- Adjust seasoning.
- In bowl, combine cheese and chives to taste.
- Ladle soup into bowls and garnish each with a quenelle of cheese.
