Turkey Steaks With Texas Red Salsa Recipe
- 1 whole turkey breast, bone removed
- 1 c. extra virgin olive oil
- 1/2 c. plus 1 tbsp. lemon juice
- 1/2 c. orange juice
- 3 cloves garlic, chopped
- 1 anchovy filet (optional)
- 1 fresh red chili, seeded and chopped
- 1 sm. red onion, chopped
- 1 sm. red bell pepper, coarsely minced
- 1 pound tomatoes, coarsely minced
- Freshly grnd pepper to taste
- Remove skin from the breast.
- Cut whole breast down the middle section, making 2 halves.
- Now slice each half crosswise into 1 1/2 inch slices.
- Combine extra virgin olive oil, 1/4 c. lemon juice, orange juice, and 2 of the garlic cloves.
- Add in the turkey steaks to the marinade; coat well.
- Let marinate 3 to 4 hrs at room temperature.
- Place remaining clove of garlic and anchovy filet in bowl.
- Mash together with back of wooden spoon to create a paste.
- Add in all other ingredients and toss well.
- Set aside till ready to use.
- When ready to cook turkey steaks, oil the grill of your barbecue.
- Cook the steaks about 5 min per side or possibly till cooked and tender inside.
- Brush occasionally with the marinade be careful not to overcook.
- Remove and serve with the salsa.
- Leftovers make wonderful fajitas with tortillas the next day!
- Serves 6 to 8.
