A Taste of Thailand
- 1 1/2 cups chicken broth
- 1 cup rice
- 1/4 cups scallions, spring or green onions chopped
- 2 each red chili peppers seeded-and chopped
- 1 tablespoon cilantro chopped fresh
- 1 tablespoon margarine
- 1 teaspoon ginger root minced
- 18 teaspoons turmeric
- 2 tablespoons lime juice
- 1/4 cups peanuts
- Spray rice cooker container with vegetable non-stick cooking spray.
- Add all ingredients except lime juice and peanuts.
- Cover and cook until rice cooker shuts off.
- Careully remove cover.
- Gently stir in lime juice and peanuts.
- Serves 6.
