Lemon Balsamic Vinnaigrette
- 1 each shallots minced
- 3 tablespoons lemon juice fresh squeezed
- 1 teaspoon lemon zest
- 3 tablespoons balsamic vinegar
- 1 tablespoon red wine vinegar
- 1/2 cup olive oil, extra-virgin
- 1 x salt to taste
- 1 x black pepper to taste
- Whisk together in a bowl, all ingredients except the olive oil.
- Or whiz in a food processor.
- While whisking or running the food processor slow drizzle in the olive oil until emulsified.
- Even easier, place all ingredient in a jar with a tight-fitting lid and shake!
- Serve.
