Roasted Green Beans

  1. Wash green beans and remove stems.
  2. Slice leek in half lengthwise, wash well and thinly slice crosswise.
  3. Wash mushrooms and cut in half.
  4. Mince garlic.
  5. Combine in a large bowl and toss with oil and salt.
  6. Transfer to a large baking sheet coated with cooking spray and roast for 20 minutes at 400 degrees stirring once.
  7. sprinkle with a little fresh lemon juice if desired.
