Spicy Honey and Curry-Roasted Mackerel
- 5 filets Mackerel
- 1/2 packet Shimeji mushrooms
- 1 small bunch Asparagus (boil)
- 5 to 6 Cherry tomatoes
- 1 Grated cheese
- 2 tbsp Honey
- 1 tbsp Curry powder
- 2 tbsp Olive oil
- 1 dash of each Salt and black pepper
- Marinate the mackerel in half the amount of the combined seasoning ingredients for 30 minutes.
- Mix the other half of the combined flavoring ingredients with the asparagus and shimeji mushrooms.
- Put the fish and vegetables on a baking sheet lined with cooking paper, and sprinkle with grated cheese.
- Cook in a 200C oven for 15 to 20 minutes while checking up on it.
