Fruit Compote

  1. Squeeze the juice from your orange into a 3-quart saucepan.
  2. Add the pears, extract, and sugar.
  3. Cook on medium-high heat, stirring occasionally, for 5 minutes, or until the pears begin to soften.
  4. Remove the compote from the heat and stir in the strawberries.
  5. Transfer to a medium bowl and refrigerate at least 1 1/2 hours, or until chilled.
  6. Divide among 4 glasses or serving bowls and top with almonds.
