Microwaved Stuffed Peppers Recipe
- 6 medium green peppers
- 1 1/2 pound grnd beef (cooked)
- 1 c. cooked long grain rice
- 1 sm. onion, minced
- 1 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 clove chopped garlic
- 1 can tomato soup
- 1/2 c. water
- Cut off tops of peppers, remove seeds and membrane.
- Mix beef with rice, onion, salt, pepper and garlic.
- Fill pepper with mix.
- Arrange in a microwave casserole dish.
- Mix soup with water.
- Pour over and around peppers.
- Cover tightly in plastic wrap.
- Microwave on high (175 degrees) for 28 to 32 min.
- Let stand covered for 5 - 10 min, then heat cheese over the top.
- (Cheese is optional.)
